Place wire rack in center of oven before turning on. This will allow the oven to get to temperature and when your PZZA arrives the oven is ready to do a quick reheat.
Allow the PZZA to cook for 3-5 mins. Watch the PZZA in the oven with the light on. This cook is only intended to quickly re-heat and crisp the PZZA, the PZZA arrives already full cooked. Pull the PZZA out when it looks right for your preference. Look for the cheese and toppings to bubble and sizzle and then it should be ready.
Allow PZZA at least 1 min to cool on rack before moving to a pan or board to cut.
Using your best kitchen chegs knife or pizza roller proceed to slice the PZZA up. Apply good pressure and cut efficiently for nice slices!
Place wire rack in center of oven before turning on. Cook PZZA on either a baking steel or pizza stone. Our recommendation is a pizza steel which are easy to find online and in stores. Using a steel or stone is what will allow you to get restaurant quality PZZA out of your home oven.
Remove the dough ball from the fridge and work with the dough on a countertop surface. Use the provided flour to dust the work surface of where you will shape your crust. Form the crust. See my video for techinque on this. When your crust is ready transfer to a wooden pizza peel or cutting board if you dont have. Make sure the peel/board is well dusted with flour to allow the PZZA to slide off an into the oven. Test this by gently shaking the surface with the crust on it to see it has slid
Empty your sauce in the middle of the crust and use a spoon to shmear it evenly around up to the beginning of the crust. Dust the sauce with Romano cheese. Sprinkle on the Mozzarella dice evenly. Add additional toppings and spread as even as possible.
Shake paddle to ensure movement before attempting to launch into the oven. Drop the crust off from the back of the oven and surface and pull the front towards the front of the oven. Once in the oven let bake for 4 mins and then using tongs or a steel peel spin the PZZA 180 Degrees. Depending on your oven temp and preffered cook you may want to leave the PZZA in the oven from 7-10 mins. Use the oven light and use your eyes to judge when you would like the PZZA to come out.
Pull the PZZA from the oven and let cool on a wire rack for 30-60 seconds. Transfer from rack to a cutting board or pizza tray. Brush excess flour off the crust. Lightly brush EVOO on top of the crust. Sprinkle that 24 month aged parm on top. Cut and serve and most importantly enjoy!
